In recent years, the Pomegranate has become one of the best-loved fruits and demanded by the market.
The cosmetics, food and pharmaceutical industries have selected it for its countless properties.
In fact, we can find it in hair shampoos, soaps, moisturising creams, detergents, supplements, and yoghurt, everywhere!
But few of us know the true history and properties of this beloved fruit.
Pomegranate is the fruit, pomegranate the tree.

Literally, the pomegranate would be an apple with seeds.
The Pomegranate also has a long list of nutritional values.
È rich in vitamins(C,K), mineral salts, polyphenols such as gallic acid, and is best known for its strong antioxidant action capable of combating free radicals and slow down the ageing process mobile.
This is why it is used in the cosmetics industry as the main ingredient in anti-ageing creams to keep the skin supple and toned.
We then move on to the structure of the fruit: inside it contains many arils, commonly known as kernels, which are pulpy on the outside and have a white seed inside.

There are even legends dating back to the Punic Wars or the Crusades, but we don't want to bore you.
We can tell you briefly that once upon a time, a king of Israel who did not wish to give his daughter in marriage to the numerous knights who came to the palace, challenged each of them to eat a pomegranate without dropping a single aril on the ground.
This is to imply that no one will ever be able to keep all the seeds safe once opened!
Sweet, sour and fragrant as it is important to know how to open correctly.
It should not be cut in half as many of you mistakenly do.
One should first cut the upper part (the part that includes the junction with the branch), then (cut) the inner veins, making it possible to open the segments with an easy extraction of the arils.
I always recommend, after opening the segments with the knife, to turn the pomegranate upside down and tap the top with the handle of the knife to let the arils fall directly onto your plates!

As for the transformations this fruit allows, we could range over many variations.
We focused mainly on three types:
1. 100% pure juice without any additives;
2. Liquor with 50% pure juice;
3. Jam for desserts and combinations.
Our juices are at the peak of their concentration, which is why the
Their colour is intense, there are no added sugars, water or colouring agents!
It really is a PURE pomegranate juice, almost impossible to find on the shelves.

The way we like to use it most is still to consume it freshly picked from the tree, for those who obviously have the possibility, or you can extract the seeds and centrifuge them to make a great 'home-made' juice.
Another use that has now gone viral, not only in our aperitifs at home but also among our customers and venues is the "Spritz Paesano"a Spritz revisited by us and our trusted bartenders.

It is amazing how a fruit so rich in benefits and nutritional properties can become even tastier when mixed with sparkling white wine (or sparkling wine/prosecco/champagne) and soda!
The deep red pomegranate juice, free of preservatives and chemical additives, is used in the our drinks for its thirst-quenching function and unique taste.
Try it to believe!

It is also important to know that you can find the fruit in markets and supermarkets from October, the time of the first harvest, until January.
The other months of the year, it is rare to find pomegranates, unless they are imported from abroad or stored in cold storage for a long time.
Remember that the further away from the tree and the harvest you eat it, the less nutrients you will take in.
For this reason, the best way to enjoy the fruit and get the maximum benefits is to eat it freshly picked.
